Obiettivi formativi
Fornire le conoscenze di base sulle tecniche di allevamento degli animali di interesse zootecnico (ovi-caprini, suini, bovini, equidi, bufali, specie ittiche e avicunicole), sulle loro caratteristiche morfofunzionali utilizzabili ai fini delle produzioni animali e sui fattori gestionali che influenzano il benessere e la qualità dei prodotti di origine animale.Fornire inoltre le basi dell'alimentazione zootecnica per le specie avicunicole.
Offrire un quadro delle leggi che disciplinano la costituzione e la gestione di un'impresa zootecnica; gli elementi di base per la stesura e l'interpretazione di un bilancio e per la previsione della produzione ottenibile da un'azienda.
Fornire, infine, competenze per esercitare assistenza nell'ambito dell'allevamento degli animali domestici o ricoprire ruoli gestionali nelle aziende zootecniche.
The course of farm management gives students a general overview on the wide range of production, management, housing, breeding, selection schemes of farmed animals in Italy (sheeps, goats, pigs, cattle, equids, buffalos, poultry, fish and rabbits). The main objective is to give students the basic background in in this sector and to make them aware of the emerging areas of interest. Focus is also given to different managing systems according to the different phases of the productive cycle, thus emphasizing animal health and welfare. The role of the disease prevention, considering environmental issues, according to animal needs and welfare, thus ensuring efficient and quality food production is also highlighted.
The course also includes a part of economic management of animal farms that provides basic knowledge for the evaluation and interpretation of a budget or financial and income statement and it gives the skills to exercise assistance on management rules that must be respected in livestock farms.

I risultati dell'apprendimento durante la parte teorica e pratica del corso consentiranno alle studentesse e agli studenti di sviluppare una propria analisi critica e obiettiva dei parametri strutturali, manageriali, produttivi, riproduttivi e indicatori di benessere animale nelle diverse tipologie di allevamento, saranno, quindi, in grado di paragonare le principali tecniche adottate in Italia. Saranno infine in grado di apprendere l'importanza della figura del medico veterinario e il suo ruolo in un contesto di salute pubblica.CONOSCENZA E CAPACITÀ DI COMPRENSIONE
Le studentesse e gli studenti dovranno conoscere le principali tipologie di allevamento, dovrà acquisire la capacità di riconoscere le problematiche interpretando gli indicatori strutturali, sanitari, ambientali, produttivi riproduttivi e comportamentali, con l'obiettivo di prevenire eventuali insorgenze di tecnopatie
CAPACITÀ DI APPLICARE CONOSCENZA E COMPRENSIONE
Le studentesse e gli studenti potranno durante le esercitazioni sviluppare capacità pratiche di manipolazione degli animali, utili per una conoscenza di base per un primo approccio agli animali domestici e di interesse zootecnico; le conoscenze scientifiche fornite loro gli permetteranno di comprendere i punti critici e le loro soluzioni.

I risultati dell'apprendimento durante la parte teorico-pratica del corso consentiranno di sviluppare la capacità di giudicare in maniera appropriata le caratteristiche di un allevamento
ABILITÀ COMUNICATIVE
Non viene richiesto uno studio mnemonico o nozionistico della materia, ma piuttosto una capacità di analisi critica e costruttiva delle problematiche legate all'allevamento degli animali da reddito, questo consentirà loro di dialogare con linguaggio appropriato con gli allevatori delle diverse specie animali su temi inerenti l'allevamento e il benessere animale.

Nell'ambito delle attività esercitative le studentesse e gli studenti saranno in grado di acquisire le seguenti competenze che verranno certificate sul portfolio delle competenze al termine dello svolgimento dell'attività esercitativa:
Sono in grado di stilare una check list dei punti critici in allevamento (per tutti gli animali in produzione)
Familiarizzano con gli alimenti in commercio e le informazioni sull'etichette comunemente usate per l’alimentazione degli animali.
Sono in grado di valutare la sostenibilità economica delle produzioni animali.
Analizzano le prestazioni riproduttive negli allevamenti di: suini, bovini, conigli, polli da carne, galline ovaiole.
Valutano correttamente il Body Condition Score (BCS) in ruminanti, suini, conigli e cavalli. Misurano correttamente lo spessore dello strato di grasso dorsale nei suini.
Riconoscono lo stato nutrizionale del cavallo.
Valutano correttamente se le condizioni di allevamento soddisfano i bisogni etologici dei bovini, dei suini, del coniglio, dei polli da carne, delle galline ovaiole e dei cavalli.
Valutano il benessere del: bovino, coniglio, pollo, galline ovaiole, cavalli.
Riconoscono le principali specie di pesci d'allevamento.
Valutano correttamente i parametri ambientali negli allevamenti ittici
Valutano correttamente se i parametri ambientali dell'allevamento sono ottimali per ogni specie di pesci d'allevamento e per le diverse parti dell'allevamento (vasche di crescita e incubatoio)
Mostrano fiducia e si avvicina in modo sicuro a un cavallo.
Eseguono correttamente l'ispezione da distanza, raccogono le informazioni,
ed eseguono l'esame fisico del cavallo
Identificano correttamente tutte le strutture anatomiche muscolo-scheletriche rilevanti nel piede equino.
The learning outcomes during the theoretical and practical part of the course will enable students to develop their own critical analysis and objective of the structural parameters, managerial, productive, reproductive and animal welfare indicators in the various kinds of farming, they are, therefore, able to compare the main animal farming techniques used in Italy. They will finally be able to learn the importance of the figure of the veterinarian and his role in a public health context.
KNOWLEDGE AND UNDERSTANDING
The student must know the main farming typologies, he must also acquire the ability to recognize the problems interpreting the structural, health, environmental, reproductive and productive indicators, with the aim of preventing possible pathologies related to sub - optimal farming conditions. The student should also understand what are the main economic indicators that guarantee to the farmer an economically sustainable farm management.
APPLYING KNOWLEDGE AND UNDERSTANDING
Students will develop skills during practical training of animal handling. These skills will be useful for a basic understanding for a first approach to pets and farmed animal, moreover the scientific knowledge acquired during the course will allow them to focus their attention on critical points of animal farms, thus letting them to suggest basic solutions.
MAKING JUDGEMENTS
The learning outcomes during the theoretical and practical part of the course will enable students to develop the ability to judge properly the main characteristics of an animal farm, thus using the acquired knowledge to express their own critical opinion about analyzed situations.
COMMUNICATION SKILLS
Students are not required to acquire a mnemonic or notional study of subject , but rather an ability of critical analysis of any basic question related with animal farming. This ability will consequently allow them to communicate with appropriate language with the farmers of the different animal species on issues inherent animal breeding, farm management and animal welfare.

As part of the practical trainings, students will be able to acquire the following skills, that will be certified on the portfolio, at the end of the activity:
The students is able to outline a checklist to analyze critical points in a farm (all production animals)
The student gets familiar with commercial feeds and feed label information that are
commonly used in feeding animals according to their physiological state.The student is able to assess the economic sustainability of business related to animal
breeding, production and keeping .The student correctly investigates reproductive performance in a pig herd, bovine herd, rabbit does, broilers, laying hens.
The student correctly evaluates the Body Condition Score (BCS) in ruminants, swine, rabbits and horses. The student correctly measures thickness of dorsal fat layer in swine. The student recognizes the nutritional status of the horse
The student correctly evaluates whether housing conditions meet the ethological
needs of the cow, the pigs, the rabbit, the broilers, the laying hens and horses.The student correctly assesses rabbit,broiler, laying hens, horses, cow welfare.
The student recognizes main species of farmed fish.

Modulo di Zootecnia:
-Concetti di base e definizioni: zootecnica, animale come trasformatore di energia, sistemi intensivi ed estensivi.
-Principi di valutazione degli animali in produzione zootecnica.
- Parametri dell'efficienza riproduttiva.
-Analisi dinamica delle popolazioni zootecniche.
-Accrescimento e produzione della carne.
-Produzione del latte.
-Principi di bioclimatologia.
-Valutazione e tutela del benessere animale negli allevamenti.
-Associazioni zootecniche.
-Zootecnia biologica.
-Bovini, ovini, caprini, suini, bufali, equini: sistemi di stabulazione e principali tipologie aziendali. Durante le esercitazioni verrà affrontato il corretto approccio all'animale, al suo contenimento, alle diverse modalità di allevamento, alla valutazione della condizione corporea e al segnalamento con riconoscimento dei documenti identificativi
-Il latte: composizione, caratteristiche tecnologiche, fattori che influenzano la qualità, fattori che influenzano la produzione. -Mungitura. Igiene della produzione del latte.
-La carne: fattori che influenzano la qualità, certificazione del prodotto, resa al macello, valutazione delle carcasse, resa allo spolpo.

Acquacoltura:
-situazione attuale dell'acquacoltura in Italia ed in Europa;

Acquacoltura tecniche di allevamento:
-L'allevamento della trota iridea;
-l'impatto ambientale diretto dell'acquacoltura sugli ecosistemi acquatici naturali;

-l'allevamento della carpa;
-l'allevamento della spigola e dell'orata.

Sostenibilità tecnica, economica e fiscale di un'impresa zootecnica.
Analisi del sistema fiscale italiano con particolare riferimento alle imprese zootecniche.
Le forme di impresa zootecnica (individuali, società, cooperative, diretto coltivatrici, in soccida).
Redazione del conto economico di un'impresa agricola sia in forma consuntiva sia preventiva.
Previsione della produzione lorda vendibile in funzione delle superfici agricole disponibili.

-Husbandry system of cattle, sheep, goat, swine, horse, and buffalo. During the practical training will be performed on animal handling, different methods of breeding and management, evaluation of the body condition and the signalment with the interpretation of the passport
-Milk production, milking procedures, hygiene and udder health.
-Milk quality and factors affecting milk composition.
-Meat production, quality, and factors affecting meat quality, carcass evaluation and characteristics in cattle and pigs, carcasses classification and traits.
-Principles of bioclimatology (environmental parameters and their impact on the animal performances).
POULTRY SCIENCE
-Poultry and rabbit welfare related to farming and products quality;
-Main characteristics and rules of poultry farming for meat and egg production in Italy.
AQUACULTURE:
-The state of aquaculture in Italy and in Europe.
-Environmental impact of aquaculture in the natural ecosystems.
-The indirect environmental impact of aquaculture.
-The general biology and husbandry of rainbow trout, sea bass, and sea bream. Trout farming in Itay.
-Carp farming, principal technologies.
-European sea bass and gilthead sea bream production, principal technologies.
-New species for modern aquaculture in Europe.
-Integrated aquaculture.
FARM MANAGEMENT AND ADMINISTRATION:
Analysis of the Italian production system with particular reference to zootechnical companies.
Livestock enterprise forms (individuals, companies, cooperatives, etc.).
Preparation of income statement and budget of an agricultural enterprise.
Prediction of gross marketable production in function of agricultural land available.

Modalità di insegnamento
Lezioni frontali eventualmente supportate da esperti del settore. Esercitazioni in gruppi presso allevamenti (asine da latte; allevamenti biologici).Allevamento degli animali domestici: 31 ore di lezioni frontali, eventualmente supportate da esperti del settore; 10 ore esercitazioni collettive in aula; 49 ore di esercitazioni in gruppi presso allevamenti.
Zoocolture: 32 ore di lezioni frontali e 13 ore per le uscite presso allevamenti.
Gestione delle imprese zootecniche ed Economia rurale: 20 ore di lezioni frontali, eventualmente supportate da esperti del settore; 7 ore esercitazioni collettive in aula.
The greater number of lectures are given to the student without groups partition. These lectures can be possibly supported by industry experts in case of subjects that need particular experience in a practical field. Practical trainings are organized in student groups at private farms in the area of Piemonte or in the experimental station of Veterinary sciences department.
ANIMAL HUSBANDRY AND MANAGEMENT: 31 hours of lectures, eventually supported by industry experts; 10 hours group exercises in the classroom (Audio Visual Sessions); 49 hours of practical training in groups at farms. d

L'accertamento dell'acquisizione dei risultati è effettuato mediante una prova pratica per l'acquisizione delle competenze ed una prova scritta.
La prova pratica per l'acquisizione delle competenze verte sull'attività svolta durante le esercitazioni di allevamento del modulo di Allevamento degli animali domestici.

Modalità di esame per i singoli moduli:
MD Allevamento degli animali domestici: esame è scritto, sono 20 domande che possono essere aperte o chiuse con 4 risposte di cui una valida
MD Zooculture: Esame scritto di 30 domande di avicunicoltura (20) ed acquacoltura (10). Domande che possono essere aperte o chiuse con 4 risposte di cui una valida.
MD Gestione delle imprese zootecniche ed economia rurale: esame scritto, 7 domande a risposta multipla e 2 aperte con discussione di casi aziendali;
Ognuno dei tre moduli che compongono la valutazione deve essere superato con la sufficienza ai fini del superamento dell’esame finale.
Il voto finale di tutto il corso sarà una media ponderata, in base ai CFU, in trentesimi, comprendente i voti delle tre prove scritte.
E' inoltre possibile sostenere un esonero secondo le seguenti modalità per i MD sotto elencati:
- MD Allevamento degli animali domestici: è prevista un esonero scritto con 11 domande, aperte e a risposta multipla, chi supera questa parte nella prova finale avrà solo più la restante parte di 9 domande (11+9 dell'esonero=20 domande). Il programma dell'esonero verterà sulla prima parte del programma, fino all'allevamento bovino escluso. Gli studenti che non sostengono l'esonero, o che non hanno raggiunto la sufficienza, al momento dell'esame riceveranno 20 domande in totale. Il voto minimo per la sufficienza è di 12 risposte corrette
- MD Zoocolture: Esonero scritto in itinere di 15 domande (10 su avicoli e 5 acquacoltura acqua dolce). Per chi supere l'esonero, l'esame sarà di 15 domande (10 cunicoli + 5 acquacoltura marina). In caso di una votazione lievemente insufficiente, ci potrà essere un colloquio orale compensativo.

The assessment consists in a practical and a written test. The practical test concerns the activities undertaken during the practical training.
Practical test-Horses:An evaluation with the Osce d will be carried out for the following skills:
1) eq_1.20_2: the student recognizes the nutritional status of the horse
2) eq_1.20_3: the student correctly evaluates the body condition score (bcs)the teacher will evaluate each student * for the following steps
approach the horse
perform the assessment of the body condition of the horse following the BCS method
locate the points of accumulation of fat in a precise and standardized way
3) eq_1.16_1: the student shows confidence and approaches a horse safely
the teacher will evaluate each student * for the following steps
approach the horse
place the rope
position and close the halter
remove the halter and restore the station.The written test includes, considering the three modules, relative questions, both MCQ, true/false and/or open questions. A right answer corresponds to one point; minus one point in case of wrong answer.
ANIMAL HUSBANDRY AND MANAGEMENT: The written text will include 20 questions about basic farming animal techniques (multiple choice questions and open questions)
POULTRY SCIENCE AND AQUACULTURE: The written test will include 30 questions (20 poultry science and 10 aquaculture)
Aquaculture competences:
PA_1.20_37: The student recognizes main species of farmed fish
PA_1.20_38: The student correctly assesses environmental parameters in fish farm
PA_1.20_39: The student correctly assesses if farming environmental parameters are optimal for each species of farmed fishes
PA_1.20_40: The student correctly assesses environmental parameters in different parts of fish farm (growth out tanks and hatchery)
PA_1.20_41: The student correctly assesses farming conditions in different part of fish farm (growth out tanks and hatchery)
FARM MANAGEMENT AND ADMINISTRATION: 7 multiple choice questions and 2 open questions with a discussion of business cases.
Each of the three written parts of the programme have to be passed with a minimum sufficient score.
The final note will be the weighted average of the practical and written tests.
Students have also the possibility to attend ongoing evaluation as follows:
- ANIMAL HUSBANDRY AND MANAGEMENT: there will be a written ongoing evaluation containing 11 questions, open and multiple choice. The evaluation programm will cover the first part until the special part (description of the different animals husbandry). The students who pass this part, in the final test will be required to pass a written with only nine questions (9+11=20 questions). Otherwise, students who have not take the ongoing evaluation, or who have not reached a sufficient score, will receive a 20 questions written test. The minimum score to pass this test is 12 correct answers
POULTRY SCIENCE AND AQUACULTURE: there will be one written ongoing evaluation, (15 questions, 10 for poultry and 5 for freshwater acquacolture), multiple choice test. In case of positive result, that evaluation is considered valid and integrated with a final test of 15 questions (10 cunicolture and 5 for marine acquacolture).
FARM MANAGEMENT AND ADMINISTRATION hasn't an ongoing avaluation.
The complete exam wil be composed by a total of 30 questions.
In case of scores slightly insufficient, these evaluations can be eventually integrated with a short oral test during the date of the final test.
