Lo studente/la studentessa deve avere solide basi in malattie infettive e parassitarie, con particolare riferimento agli agenti di zoonosi, deve saper applicare l'analisi del rischio sulla base delle conoscenze acquisite in igiene e tecnologia degli alimenti. Inoltre deve saper richiamare gli elementi di anatomia patologica necessari per formulare diagnosi differenziali ed emettere un giudizio ispettivo sulle carni.

Obiettivi formativi
L'obiettivo dell'insegnamento è saper integrare conoscenze di tecnologia ed igiene delle filiere che producono alimenti di origine animale, sanità e sicurezza delle produzioni primarie, principi di normativa di interesse veterinario per formare il profilo del medico veterinario che si occupa di filiere alimentari. Fornisce altresì le conoscenze indispensabili per l'esame di abilitazione e per il proseguimento degli studi nelle scuole di specializzazione nella classe dell'Igiene della Produzione, trasformazione, commercializzazione, conservazione e trasporto degli alimenti di origine animale e loro derivati.The aim of the course is to integrate knowledge of technology and hygiene of the supply chains relative to food of animal origin, hygiene and safety of primary productions, principles of legislation of veterinary interest, in order to prepare the future veterinarian to work in the food supply chain. CONOSCENZA E CAPACITÀ DI COMPRENSIONEalla fine di questo insegnamento lo studente/la studentessa dovrà:
- sapere le principali norme alla base dell'ispezione degli alimenti;
- conoscere i rischi biologici, fisici e chimici nelle diverse filiere produttive (latte, pesce, carne, uova)

Alla fine di questo insegnamento lo studente/la studentessa dovrà saper:
- applicare le principali norme sanitarie agendo nei diversi contesti;

- effettuare analisi microbiologiche per criteri di igiene e di sicurezza;
- individuare le metodologie di intervento a seconda dei contesti;

Modalità di insegnamento
Per raggiungere gli obiettivi formativi di questo insegnamento, si utilizzano lezioni magistrali (84 ore), esercitazioni in laboratorio e in strutture didattiche, visite d'istruzione, lavori a gruppi legati a casi studio e problem-solving (46 ore).
Le lezioni magistrali sono supportate da presentazioni (pptx) con illustrazioni grafiche, mappe concettuali, fotografie, filmati; sono previste prove di autovalutazione.
Le esercitazioni in laboratorio e in strutture didattiche prevedono la partecipazione attiva degli studenti e comprendono attività di ispezione, monitoraggio e campionamento presso il macello del dipartimento, analisi e refertazione di prelievi di matrici alimentari nei laboratori didattici, lavoro a gruppo su simulazioni di interventi nell'ambito di autocontrollo e controllo ufficiale e successiva presentazione scritta e orale; predisposizione di procedure prerequisiti e progettazione di piano HACCP (lavoro a gruppi), con elaborato scritto e presentazione; attività guidate per il riconoscimento delle principali specie ittiche.
Le visite d'istruzione sono organizzate a gruppi; ogni studente/studentessa partecipa a 3 visite d'istruzione presso stabilimenti alimentari al fine di osservare i processi produttivi, comprendere e valutare il ruolo dell'azienda e del controllo ufficiale in ambito di igiene e sicurezza alimentare: al termine delle visite d'istruzione lo studente/la studentessa sono invitati a predisporre una relazione tecnica (facoltativa) che potrà essere discussa in sede di esame.To achieve the learning objectives of this course, lessons (84 hours), laboratory and practical activities in teaching facilities, extramural practical activities, discussion of case studies and problem-solving (46 hours) are proposed.
Laboratory and didactic activities involve the active participation of students and include inspection, monitoring and sampling activities at the slaughterhouse of the department, analysis and reporting of food matrices collection in teaching laboratories, simulations of interventions (private and official control) and subsequent written and oral presentation. Preparation of prerequisite procedures and design of HACCP plan (group work), with a written and oral presentation; guided activities for the recognition of the main fish species. Educational visits are organized by groups; each student participates in 3 educational visits to various food premises in order to observe production processes, understand and evaluate the official authority and food business operator role in hygiene and safety, at the end of the course the student is invited to prepare a technical report (optional) that can be discussed during the exam

Modalità di verifica dell'apprendimento
PROVA FINALE: La prova finale verte, per tutti gli studenti/le studentesse sull'ultima edizione del programma, compreso il programma delle esercitazioni. È costituita da un accertamento scritto con prove strutturate (N=20) e non strutturate (N= 10) integrato con una prova orale.Per l'accesso all'orale occorre aver raggiunto la soglia di 16 punti, con raggiungimento di punteggio minimo di 10/20 per i Moduli di MECO e COPLU e di 5/10 per COCAR. La prova orale verte su argomenti dell'intero insegnamento e si basa su discussioni di situazioni problema o simulazione di interventi.
Nello specifico la valutazione dello scritto seguirà la seguente griglia:

0,5 punti con risposta corretta
0 risposta incompleta o errata
Per domande aperte:
2 punti per risposta ben sviluppata, centrata rispetto alla richiesta

Per gli studenti/le studentesse frequentanti, l'apprendimento viene inoltre monitorato attraverso le attività interattive in aula e nei laboratori, la partecipazione alle attività online, verificato tramite test scritto, eventuale colloquio orale.
In caso di emergenza sanitaria legata al COVID l'esame avviene solo in forma orale.
ATTIVITA' ONLINE: le attività si svolgono sulla piattaforma Moodle e consistono nella visione di viedeo, animazioni e altro materiale didattico, proposte di casi simulati, quiz di autoapprendimento, altre attività.
FINAL TEST: The final exam is for all students on the last edition of the program including the exercise program. It consists of a written assessment with structured (N = 20) and unstructured questions (N = 10) and an oral test.For access to the oral exam it is necessary to have reached the threshold of 16 points, with a minimum score of 10/20 for the MECO and COPLU modules and 5/10 for COCAR. The oral exam focuses on topics of the entire teaching and is based on case/problem solving.
Specifically, the evaluation will take into account the following grid:

For attending students, learning is monitored through interactive classroom activities and participation in online activities, and verified by written test, possible oral interview, and discussion of the report produced at the end of the practical activity in food process plants
ONLINE ACTIVITIES: The activities take place on the Moodle platform and consist of videos, animations and other educational material, simulated case proposals, self-learning quizzes, and other activities. The activities of each student are monitored.
The online activities, as well as the exercises and lessons with discussion of inspection cases, constitute fundamental elements for the acquisition of skills. In case of COVID emergency the exam will be only in oral form.
